Preheat oven to 450 degrees.
Place vegetables on a baking tray and season with sea salt, fresh pepper, olive oil and herbs.
Bake until golden brown
Place roasted veggies on a round baking tray.
Chop the onion and incorporate the tahini.
Bathe the veggies in tahini and shred provolone over the top. Return to the oven and bake until tahini is golden.
Remove from heat an season with zaatar and fresh lime juice.
